Today's ost comes from Beth over at Printcess (whom you may remember from last year, when Misty reviewed her fabtastic literary & fairy tale-themed makeup line (Seriously, guys: You need Riddle, Happily Ever After, Peasant... and oh, probably the whole damn line in your life), as well as fairy tales + perfect shoes.

The ever-creative Beth had a whole laundry list of amazing ideas to share with you guys this year, but the one we absolutely jumped at was the idea of fairy tale suitable recipes. Misty has been wanting to do something similar on her blog for ages, but these events always somehow sneak up on me. (We don't know how, exactly -- we set the dates...) So of course, we were thrilled when Beth suggested almost exactly what Misty had been wanting to do!

We're back with more fairytale-inspired recipes! In case you missed the first post, which includes a Goldilocks recipe and a Snow White recipe, you can find it here.
Below are more fairytale-inspired recipes, adapted from other chefs and posted for your consumption. 


Did you know that rampion, the flowering herb Rapunzel's mother risks a witch's wrath for in the German version of the tale, has gorgeous purple flowers and is edible both in leaves and root? The tale was adapted from Persinette, which labels parsley as the desired herb.

Rapunzel Pesto
(Adapted from It's Your Life)
Ingredients:
2 cups parsley
3 cloves garlic
3 Tblsp olive oil
1 Tbsp sundried tomatoes
2 Tblsp cheddar cheese
Salt, to taste

1.) Run the cheddar cheese through a food processor to powder it.

2.) Combine all other ingredients in a food processor or blender, until combined.


3.) Let it mellow in the fridge for a day before serving.



Princess & The Pea Potato Mattresses 

(Adapted from Roti&Rice)
2 lbs. potatoes, peeled and cubed
1 1/2 c frozen peas
1/2 cup coconut milk
Salt & Pepper to taste
4 Tblsp butter
1/2 cup Panko or breadcrumbs
3 Tblsp coconut oil


1.) Place potatoes in a pot, add a pinch of salt, and cover with water.


2.) Bring to a boil, then reduce heat to med-low and cook for 15 minutes.

3.) Add the peas and continue to cook for another 5 minutes.


4.) Remove the potatoes/peas from heat and drain thoroughly.

5.) Add coconut milk, butter, salt and pepper. Mash until combined, and let cool until you can handle them without burning yourself.


6.) Pour Panko onto a shallow plate.


7.) Shape potatoes patties about 2" in diameter and 1/2" in thickness, or smaller.

8.) Press patties into Panko, coating on both sides.


9.) Heat the coconut oil in a pan over medium heat. Fry for 2-3 minutes per side, remove from heat and serve hot.



For dessert, I recommend wild strawberries (but only if you run into three little men in the woods and are very polite and obliging), or perhaps a gingerbread house to nibble (but beware cannibalistic witches who live inside them!)
